Simple Rice Pilaf
A tasty side-dish that will compliment almost any meal
Ingredients
- 2 cups long grain white (uncle bens works best)
- 2 - 4 tablespoons butter or margarine
- Pinch teaspoon salt
- 1/2 - 1 onion diced (personal preference)
- 4 cups chicken stock or vegetable stock
Directions
In small pot sauté diced onions until lightly softened
Pour in rice and stir until lightly glazed and almost transparent looking.
Sprinkle salt over the rice and pour in the stock.
Cook on high heat until it boils, cover pot and reduce heat to low
Allow rice to cook for 20-35 minutes.
Turn off heat and keep covered until you are ready to serve.
(Optional) Mix in heated peas or toasted almonds to make the pilaf more interesting.
